Ingredients:

1/2 bunch kale, tough stems and center ribs removed

1/2 avocado, peeled and chopped

2 tablespoons lemon juice

2 cloves garlic, minced

¼ cup diced red onion

1 large apple, cored and chopped

1/4 cup raw cashews, chopped

Walnut Pear Green Salad

8 ounces (about 5 cups) mixed baby greens

2 ounces (about 2 cups) arugula or watercress

1 pear, peeled, cored and grated

1/4 cup dried currants

1/4 cup chopped walnuts

2 tablespoons Pear vinegar or rice vinegar

2 teaspoons olive oil

2 pears, peeled cored and sliced
