Recipe Number 1
Quick and Easy Kale Salad
1 bunch Tuscan kale (about 1/2 pound), center ribs and stems removed, leaves thinly sliced crosswise.
Marinate: whisk 2 tablespoons of white balsamic vinegar, 1 tablespoon of rice vinegar and ½ teaspoon honey in large bowl. Add kale and toss to coat. Let marinate 20 minutes at room temperature, tossing occasionally. Season to taste with salt and pepper.
TIP: to make kale softer massage the marinate into the kale with your hands for 3-4 minutes.
