4 Quick and Easy Recipes:

1. Mango Tango Green Smoothie


1 cup water

1 clementine

½ bunch of kale

1 handful of baby spinach

1 frozen banana

1 cup frozen mango

1tablespoon ground flax seed

Place all ingredients in a blender and blend until smooth.

2. Blue Dino Smoothie


1 cup of water or almond milk

1 tablespoon ground flax seed

1 frozen banana

2 handfuls of baby spinach

1 handful of kale

1 cup of fresh or frozen blueberries

Blend and enjoy!

3. Mediterranean Kale Salad


½ bunch kale, stems removed

1 teaspoon extra-virgin olive oil

2 tablespoon freshly squeezed lemon juice

1 clove garlic, minced

½ red bell pepper, diced

1 tablespoon pine nuts or chopped cashews

1 tablespoon sliced olives

salt to taste

Stack 2 of the kale leaves with the stem end facing you. Fold in half lengthwise and roll tightly like a cigar. Slice crosswise into thin strips. Repeat with the remaining 2 leaves. Chop the kale strips a few times, so they aren’t too long. Put in a medium bowl along with the olive oil, lemon juice, and salt. Toss well with your hands, working the dressing into the greens. Add the red bell pepper, pine nuts, and olives and toss gently.

4. Creamy Sauce For Steamed Vegetables


1 cup unsweetened almond milk

1/3 Cup Raw, Unsalted Cashews

1/4-Cup Nutritional Yeast

3 Tablespoons Low-Sodium Tamari or Soy Sauce

1 Tablespoon Tahini

1-Tablespoon Fresh Lemon Juice

2 Teaspoon Dijon Mustard

1/2-Teaspoon Smoked Paprika

1 Teaspoon garlic powder

Add all the ingredients to the blender and blend until smooth.
