Let’s Cook Together! Roasted Vegetables

Today I would like to invite you to peek into my kitchen and let’s cook together one of my favorite dishes, Roasted Vegetables.

It’s quick, easy, and delicious! Vegetables are an essential part of my diet and I always look for more ways to add them into my meals in fun and different ways.

My nutritional approach and the secret to staying fit and healthy is: the more of the healthy foods you are able to add to your menu, the more of the unwanted foods you are able to eliminate!

This dish is perfect for a main course, as a side dish or next day lunch leftovers. This recipe is just a guideline for many more creations you can make using other vegetables that you and your family love.

So, let’s get started!



Step 1: Ingredients 

1 small butternut squash

2 red bell peppers

1 sweet potato

3 Yukon Gold potatoes

1 red onion

1 TBS chopped fresh thyme

2 TBS chopped fresh rosemary

1/4 cup olive oil

2 TBS balsamic vinegar

2 TBS lemon

salt and freshly ground black pepper

Step 2:

Peel and cube/dice the vegetables

Preheat oven to 475 degrees F (245 degrees C).


Step 3

In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes.

Separate the red onion quarters into pieces, and add them to the mixture.

In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper.

Toss with vegetables until they are coated. Spread evenly on a large roasting pan.

Step 4 

Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes,

or until vegetables are cooked through and browned.
